Beef Jerky Breakfast Scramble

Ingredients (serves 2)
Eggs, 6
Beef jerky, 40 g
Butter, 1 tbsp
Milk or cream, 2 tbsp
Grated cheese (cheddar or similar), 60 g
Spring onions, 2
Salt, to taste
Black pepper, to taste
Metode
Cut the beef jerky into very small pieces so it blends well with the eggs. Finely slice the spring onions.
Crack the eggs into a bowl, add the milk or cream and whisk lightly until combined. Season with a small pinch of salt and black pepper.
Heat a non-stick pan over medium-low heat and add the butter. Once melted, add the beef jerky and warm it gently for 1 to 2 minutes so it softens slightly and releases flavour.
Pour the egg mixture into the pan and allow it to sit briefly before stirring gently. Cook slowly, stirring occasionally, until the eggs are softly set. This takes about 5 to 7 minutes.
Add the grated cheese and most of the spring onions just before the eggs are fully cooked. Stir gently until the cheese melts and the eggs are creamy.
Remove from the heat and serve immediately, topped with the remaining spring onions. Serve with toast or bread if desired.
This breakfast scramble is quick, comforting and packed with protein, making it ideal for busy mornings or relaxed weekend breakfasts.
