Blesbok is the bold one. Of the QINA game meats this is the most outspoken — darker, deeper, more obviously wild than springbok, with a long savoury finish that keeps going after you have stopped chewing. If beef biltong is the comfortable default and springbok the gentle step sideways, blesbok is the one that actually tastes like the bush.
Cured first, dried slowly. Vinegar and spice go into the meat before drying, then it is air-dried at low temperature rather than cooked. No smoke, no shortcut. A snapstick is pressed and dried whole, which is why the chew is denser and more serious than a thin sliced strip.
Made to be carried. A 30 g stick lives happily in a coat pocket, a hunting bag or the side of a rucksack, needs no fridge, and survives being sat on. We stock the full QINA game range and ship across Europe.
