Cruga Biltong Original — the South African original, air-dried in Britain
Cruga Biltong Original is beef biltong made to an authentic South African family recipe, cured and air-dried whole rather than sliced thin and heat-dried like jerky. That one difference is the whole product: biltong comes out tender and deeply beefy where jerky comes out chewy and smoky. Cruga has been doing it this way in the UK since David Low, born in South Africa, brought the family recipe with him in the late 1950s.

How Cruga makes it
The beef is marinated in vinegar and salt first. The spicing is black pepper, coriander and nutmeg. Then the meat is hung to air-dry whole, with no heat, no hurry and no added nitrates. Nothing is sliced until the drying is done, so the pieces keep their grain and some moisture — which is why biltong tears rather than snaps.
Taste and texture
Rich, beefy and soft-textured, with the vinegar cure leaving a faint tang underneath the salt. The chew is short and yielding, closer to a good cold roast beef than to a jerky strip. Original is the plain-speaking half of the Cruga pair. If you want the same biltong with chilli over the top, that is Cruga Biltong Chilli.
