Kuivalihakundi Beef Jerky Garlic is the Finnish beef base of the Original with the garlic allowed to step forward and do the talking. Real garlic goes into the cure before drying rather than getting dusted on at the end, and the difference is obvious from the first chew.

How Kuivalihakundi makes it

Finnish farm beef, cut from rump roast, salt-cured and then dried slowly in low-temperature chambers. The slow drying is what does the work here: garlic that is hit with heat turns harsh, while garlic given hours at low temperature rounds off and settles into the meat instead of sitting on top of it.

Taste and texture

Closer to a roasted clove than a raw bulb. The garlic is warm and rounded, it arrives with the savoury cure rather than ahead of it, and it lingers for a good while after the last piece has gone. Black pepper works quietly at the back, and the beef is still the loudest thing in the bag. The strips are dense and properly chewy, the way low-temperature drying leaves them.

Who it is for

Anyone whose favourite pizza order contains the words "extra garlic". It is very good on its own, better with a sharp aged cheese, and genuinely excellent next to a glass of red. Put it on a board with cured sausage and it disappears first.
