High-Protein Beef Jerky Power Salad

Ingredients (serves 2)

Mixed salad leaves, 120 g
Beef jerky, 50 g
Cherry tomatoes, 150 g
Cucumber, ½ large
Red onion, ½ small
Feta cheese, 80 g

Olive oil, 3 tbsp
Lemon juice or red wine vinegar, 1 tbsp
Honey or maple syrup, 1 tsp
Dijon mustard, 1 tsp
Salt, to taste
Black pepper, to taste

Metodo

Cut the beef jerky into small bite-sized pieces. Slice the cherry tomatoes in halves, dice the cucumber and finely slice the red onion.

Place the salad leaves in a large bowl and add the tomatoes, cucumber and red onion. Scatter the beef jerky evenly over the salad and crumble the feta cheese on top.

In a small bowl, whisk together the olive oil, lemon juice or vinegar, honey and Dijon mustard. Season with salt and black pepper to taste.

Drizzle the dressing over the salad just before serving and toss gently to combine.

This salad works well as a light lunch, a quick dinner or a post-workout meal. The beef jerky adds a savoury, satisfying protein boost that turns a simple salad into a filling dish.
