Sunshine Delights Dippies Dark Chocolate Pineapple are chunky pieces of soft dried pineapple, half-dipped in dark Peruvian chocolate, in a 100 g bag from Sunshine Delights, the Hamburg dried fruit brand. Pineapple and dark chocolate is a less obvious pairing than mango, and that is exactly why it works: the fruit's acidity cuts straight through the cocoa.

How it is made
The pineapple is grown in Thailand, picked ripe, cut and gently dried, then dipped partway into melted dark chocolate made with Peruvian cocoa and left to set. Store at room temperature, away from direct sunlight.
