Biltong Premium Droëwors Original — thin South African beef sausage, dried until it snaps
Biltong Premium Droëwors Original is a 40 g bag of thin air-dried beef sausage made to a traditional South African recipe. Coriander and nutmeg are what mark it out as South African rather than European, and the drying is what makes it snap instead of bend. High in protein, no added sugar, and considerably harder to stop eating than it looks.
Why this one
- A sausage, not a slice: the seasoned beef goes into a thin casing before drying, which concentrates everything into one dense mouthful.
- That dry snap: properly made droëwors breaks cleanly. If it bends, it has not dried long enough.
- High in protein, no added sugar: the sweetness of a glazed jerky is nowhere in this bag.
How Biltong Premium makes it
Droëwors is biltong's cousin, and Biltong Premium treats it that way: the same South African curing tradition, with apple vinegar and a coriander-led spice mix, but the meat is filled into thin sausages and hung to air-dry rather than sliced. Nutmeg is the quiet one in the mix — it never announces itself, but take it out and the whole thing tastes European.
Taste and texture: deeply savoury and beefy, warm with coriander, with the nutmeg showing up somewhere around the aftertaste. It is drier and denser than sliced biltong, and it eats in short brittle pieces rather than in strips, which makes it the more moreish of the two formats and the harder one to ration.
When to reach for it
Droëwors belongs next to a braai, which is where it makes the most sense. Failing that: a long drive, where a bag of snapping sausage keeps a driver awake better than radio, or a plate in the middle of a table while people stand around waiting for food that is not cooked yet.
Frequently asked
- What actually is droëwors? Dried sausage. South Africans make it alongside biltong: the same cure and spicing, but the beef is filled into a thin casing and air-dried until firm all the way through.
- How is it different from biltong? Biltong is sliced beef and stays tender. Droëwors is a sausage and comes out drier, denser and crunchier at the break.
- How should I keep it? Room temperature while sealed. After opening, keep the bag closed somewhere cool and dry, and it will stay at its best for a few days.
