Taste and texture

Bright, citrus-herbal and clean, closer to a Vietnamese marinade than to anything you would call a crisp aisle snack. The lemongrass is unmistakable and has nowhere to hide, so it has to be good, and it is: fragrant rather than perfumed, with a fresh, faintly grassy lift at the end of the bite. The chicken underneath is mild and savoury, and the strips are firm without being tough. No smoke, no chilli, no sweetness worth mentioning.
