Indiana Soft Beef Jerky Hot & Sweet: the loud one, softly spoken
Indiana Soft Beef Jerky Hot & Sweet is the most talkative flavour in the Soft line: a sweet, smoky cure over tender beef, with a peppery warmth that builds across a couple of strips instead of announcing itself. Same easy chew as the rest of the Soft range, considerably more going on.
Why this one
- It builds: the first strip reads sweet and smoky. By the third you have noticed the pepper, and by then stopping is not on the table.
- The sweetest of the three Softs: Original is plain and Peppered is sharp. This is the one for people who genuinely like a sweet-savoury jerky.

How Indiana makes it
The beef is cured with a sweet-savoury seasoning, lightly smoked, then dried only as far as the Soft line allows, which leaves the strips supple rather than stiff. Because the flavour goes in with the cure, the sweetness runs through the strip instead of sitting on it as a glaze. Bags are sealed under a protective atmosphere, so cupboard temperature is fine until one is open; after that it wants eating within a couple of days. The odd pale patch on a strip is just part of drying.
Taste and texture
Dark, sweet and smoky at the front, with a proper beef savouriness underneath and a peppery glow that arrives late and then lingers. It is the flavour in the range that comes closest to a barbecue, and the one most likely to be finished standing up over a kitchen bin. The strips are soft and yielding and pull apart in strands, never the leathery slab that puts people off jerky in the first place.

Beef, sugar, dextrose, SOY PROTEIN HYDROLYSATE (SOYA), salt, sea salt (0,2%), yeast extract, wine vinegar, pepper, flavouring, smoke flavouring, natural flavouring, garlic, preservative: sodium nitrite. It takes 180g of beef to make 100g of final product. Packed in protective atmosphere. Storage: no cooling. Consume within 48 hours from opening. Occasional white film on product does not impair quality. Oxygen absorber in packaging is not edible.
