QINA Beef Sliced Biltong - the one everyone in the room agrees on

QINA Beef Sliced Biltong is traditional South African-style biltong made with Namibian beef, cured and air-dried, then sliced thin so you can pick at it rather than wrestle it. Every range needs a starting point and this is QINA's: unmistakably beef, warm with coriander and pepper, and the bag that empties first when it goes round a table.

How QINA makes it

Jerky is sliced and dried with heat. Biltong is cured first, with spice and apple cider vinegar worked into whole muscle, and only then air-dried slowly at low temperature. Nothing is smoked and nothing is rushed, which is why the result tastes of beef and cure instead of a sweet coating brushed on at the end.

Taste and texture

Straightforwardly beefy, with the coriander warmth traditional biltong is built on and a clean sharpness from the cure behind it. The slices are thin, dry to the touch and chewy without being hard work, and they leave nothing greasy on your hands, so the bag can go round without a stack of napkins. What is the difference between biltong and jerky? Method and moisture. Jerky is dried with heat and usually marinated sweet; biltong takes a vinegar-and-spice cure first and is then air-dried, which leaves it softer and meatier.

Can it live in a desk drawer? Happily. Sealed, it is stable at room temperature. Once the bag is open, keep it dry and do not leave it there for a fortnight.

Sliced or snapstick? Sliced is thinner and softer and better for sharing. The snapsticks are denser and made for a pocket.
