Grizzly Foods Biltong Red Heat — air-dried beef with chilli behind it
Grizzly Foods Biltong Red Heat is traditionally air-dried beef seasoned with chilli and smoked paprika. It has the rich savoury depth of classic biltong with a steady warmth running underneath, and it is the hottest of the three Grizzly biltongs we stock.
Why this one
- Smoked paprika first: sweet, dark and a little woody before the chilli shows up at all.
- Heat that spreads: a warmth across the back of the mouth rather than a spike on the tongue.
- Still biltong: air-dried and soft, not a hard spiced strip.
- Protein-heavy: the reason biltong ends up in so many gym bags.
How Grizzly Foods makes it
Beef slices are cured with sea salt, chilli and smoked paprika, then air-dried slowly rather than smoked — the smokiness in this one comes out of the paprika, not out of a smoker. Apple cider vinegar plays its traditional part in the cure, keeping a bright edge underneath all that spice.
Taste and texture: paprika sweetness opens it, the chilli builds from the second bite and settles into a glow that outlasts the last piece. Underneath all of that the beef is still doing the heavy lifting — savoury, mineral and properly concentrated. The slices stay soft and tear easily, which is why the heat feels companionable rather than aggressive.
When to reach for it
Card games and late evenings, when a snack has to earn its place on the table. It also works on a cold hike, where a bit of internal warmth counts as a feature, and it is the pack to take if you like chilli but find smoked jerky too heavy going.
Frequently asked
- How hot is it next to Grizzly's Burn Baby Burn jerky? Gentler. Burn Baby Burn is built around habanero; Red Heat is a steady warmth you can eat a whole pack of.
- Is it smoked? No. The smoky note comes from the paprika — everything Grizzly Foods calls biltong is air-dried.
- Storage once it is open? Seal the pack, keep it cool and dry, and finish it soon. Before opening, it is perfectly happy in a cupboard.
