Grizzly Foods Biltong Wild Rosemary — air-dried beef with a herbal edge
Grizzly Foods Biltong Wild Rosemary is traditionally air-dried beef seasoned with rosemary and garlic. Cured and dried in air rather than smoked, it keeps the deep savoury bite of classic biltong and lays something green over the top of it.
Why this one
- Rosemary that behaves: it reads as pine and resin, never as perfume or soap.
- Roasted garlic, not raw: mellow and rounded, sitting underneath rather than shouting over the top.
- Air-dried: soft, open-textured slices that tear cleanly instead of snapping.
- High in protein: a small pack that does a serious job.
How Grizzly Foods makes it
The beef is cured with sea salt and hung to dry slowly in moving air, with no smoker and no heat pushing it along. Rosemary and garlic go in with the cure so the herbs work their way through the slice rather than sitting on the surface of it. Apple cider vinegar is part of the traditional biltong cure, and it is what gives the finished slices their faint background tang.
Taste and texture: resinous and aromatic on the first bite, then the garlic arrives soft and roasted, and the beef holds the whole thing steady underneath. The slices are supple and chew down slowly. In the trio Grizzly Foods makes, this is the middle one: more going on than Classic, none of the chilli of Red Heat.
Who it is for
People who put rosemary on potatoes without being asked. It belongs on a board with cheese and a glass of something red, and a 30 g pack weighs nothing in a coat pocket on a long winter dog walk.
Frequently asked
- Is the rosemary overpowering? No. It is assertive on the nose and far more restrained in the mouth — the beef still leads.
- Smoked or not? Not smoked at all. Air-drying is what gives biltong its softer texture and cleaner flavour.
- What is the case of 16 for? Anyone who has noticed that one pack per household per evening is an optimistic estimate.
