QINA Springbok Sliced Biltong - game meat without the lecture
QINA Springbok Sliced Biltong is free-range springbok, cured and air-dried the traditional biltong way and cut into thin slices. Springbok is the polite introduction to game: clear, clean and nowhere near as wild as people expect from an antelope, which makes it the bag to hand to anyone who has already decided they do not like game meat.
Why springbok
Gentler than its reputation: a clean savouriness with no livery edge and none of the heavy musk that puts people off venison.
Fine-grained and tender: the grain stays soft through drying, so the slices give way quickly instead of turning into jaw work.
Free-range by definition: springbok are not raised in sheds, they graze open veld, and lean, clean-tasting meat is what that produces.
How QINA makes it
The meat goes into a vinegar-and-spice cure before it ever sees a drying room, then dries slowly at low temperature. That is the biltong method rather than the jerky one: no heat blast, no smoke and no sugar coating, so what reaches you is springbok and seasoning.
Taste and texture
Light for a red meat and slightly sweet at the edges, with the warmth of the cure sitting politely behind the meat rather than in front of it. Against QINA's beef it reads finer and more delicate; against blesbok or eland it is the quiet one. The strips are thin and supple, dry outside and still soft in the middle, and a 40 g bag goes a long way when you are eating a slice at a time.
Who it is for
The dinner-party board where somebody wants to know what springbok tastes like, the walker who wants real food in a pocket, and anyone stepping up from beef biltong without wanting a shock. It is also the safest thing to put in front of a sceptic.
Frequently asked
Is springbok strong-tasting? No. It is one of the mildest game meats there is, cleaner than venison and closer to a good lean beef than to anything musky.
How should I keep it? Sealed at room temperature before opening. After that, keep the bag closed and cool and eat it over a few days.
Sliced or stick? These are thin sliced strips, softer and easier to share. QINA's snapsticks are a denser chew in a single piece.
