The heat arrives late rather than up front. First you get the honey and the smoke, then the chilli builds across the back of the tongue and sits there pleasantly while you reach for the next piece. How Indiana makes it

EU-sourced beef is cured, seasoned, lightly smoked and slow-dried, so the strips stay soft rather than brittle. Packed in a protective atmosphere and shelf-stable — no fridge needed until it is open, then finish it within a couple of days. An occasional white film on the surface is normal and does not affect quality.
