Indiana Salami Jalapeno: a snack stick with a green chilli streak
Indiana Salami Jalapeno is a dried pork-and-bacon sausage snack with green jalapeno running through it. An 18 g stick that eats like a slice off a charcuterie board rather than a strip of jerky, built in the same dry-sausage style as Indiana's Salami Original, then pushed somewhere warmer.

How Indiana makes it
Indiana cures pork and bacon, spices the mix, smokes it and dries it down into one firm stick, then seals the pack under a protective atmosphere. That is why it keeps on a shelf with no cooling at all. The best-before date is printed on the front of the pack. If a pale chalky bloom shows up on the surface, that is salt crystallising out of the cure, and you can eat it.
Taste and texture
It gives under the teeth the way good salami does, marbled and soft rather than stringy. Cured pork lands first, bacon smoke sits behind it, and the jalapeno arrives last as a grassy warmth that spreads slowly and then backs off before the next bite. Next to the Salami Original it tastes brighter and greener; next to Indiana's dried beef it is a completely different animal.
When to reach for it
Beer and a wooden board. Sharp cheese, hot mustard, dark rye. Or standing in the kitchen at six deciding that dinner is still an hour away and that this is not acceptable.

How hot is it really? Warm, not punishing. Jalapeno sits at the mild end of the chilli scale, and the fat in the sausage stops the heat spreading.
Does it need refrigerating? No. Somewhere cool and dry is plenty. A stick is one serving, so once it is unwrapped there is nothing left to store.
How is it different from the Salami Original? Same dry-sausage base, same soft bite. The jalapeno version adds a green chilli lift the Original does not have.
