Wild West Hot & Spicy – the bag where Wild West stops being sweet

Wild West Hot & Spicy is beef jerky built on a different recipe from the rest of the British brand's range. The sweet-savoury cure that defines Original, Honey BBQ and Jalapeno is largely set aside here. In its place: chilli flakes, smoked paprika and jalapeno flakes doing the flavour work, with garlic behind them. It is the least sweet bag Wild West makes, and the one savoury-first snackers eventually settle on.

Why this one

  • A genuinely different build: no apple cider vinegar, no pineapple, only a small sugar component to hold the spice together.
  • Layered heat: smoked paprika underneath, jalapeno warmth on top of it, chilli flakes for the spike. Not one flat note repeated.
  • Lean and protein-dense: a serious hit of protein out of a small bag.

How Wild West makes it

Wild West is a British jerky brand and this one is produced in the UK. The spice goes into the cure before drying rather than onto the finished strips, which is why the heat reads as part of the meat instead of a coating that comes off on your fingers. The beef is sliced thin and dried like the rest of the range, so the texture is familiar even though the flavour is not.

Taste and texture

Smoke arrives first, courtesy of the paprika, then the chilli builds steadily and sits there. There is no sugar rush to knock it back down, so the finish is long, dry and savoury with garlic in the background. The strips are pliable and tear cleanly. If Jalapeno is sweet-with-heat, this is heat-with-beef.

When to reach for it

With a dark beer or a smoky cocktail, where the sweeter bags would clash. In the desk drawer for the afternoon when a biscuit would be an insult. On the sofa for a long film, because it is a bag you pick at rather than empty.

How hot is it compared with Wild West Jalapeno? Hotter, and more importantly drier. Jalapeno wraps its heat in honey. This one does not, so the chilli has nowhere to hide.

Why does it taste so different from the rest of the range? Because it is a different recipe rather than the house cure with chilli added. That is deliberate, and it is the reason people who dislike sweet jerky get on with this one.

Does it need refrigerating once opened? No. Reseal it, keep it cool and dry, and eat it within a few days for the best texture.
