Wild West Wagyu Beef Jerky – the marbled one, and you can tell immediately
Wild West Wagyu Beef Jerky is the premium end of the British brand's range: Wagyu beef, a simple brown sugar cure, and a chew that is noticeably softer than anything else Wild West puts in a bag. Most jerky is cut from lean trim because fat is awkward to dry. This one goes the other way on purpose, and you notice on the first piece.
Why this one
- Wagyu, not lean trim: the breed is known for fine streaks of marbling running through the muscle, and those streaks are exactly what most jerky is missing.
- The softest chew Wild West makes: the marbling keeps the strips pliable instead of firm, so you tear rather than wrestle.
- A restrained cure: brown sugar, apple cider vinegar and pineapple, with garlic and black pepper kept underneath so the beef stays the loudest thing in the bag.
How Wild West makes it
Wild West is a British jerky brand. For the Wagyu version it takes a risk most producers avoid: a marbled cut rather than the lean muscle that dries easily and predictably. The cure is deliberately short on ideas so it does not bury what you are paying for.
Taste and texture
Sweet on the front from the brown sugar, then a long savoury finish where the beef does nearly all the talking. Garlic, onion and pepper sit behind that rather than on top, and the pineapple gives a faint fruity lift right at the end. The strips are richer and more yielding than the standard Wild West Original, and they leave a proper beefy coating rather than a sugary one.
Who it is for
The person who orders the Wagyu burger when it is on the menu. Anyone who wants to taste what marbling actually does, ideally with a bag of Wild West Original open next to it for comparison. It is also the easiest jerky in the range to give as a present. Red wine, a smoky bourbon or a properly bitter IPA all work alongside it.

What does Wagyu actually change? Texture, mostly. Fat carries flavour and keeps the dried strip soft, so you get a rounder taste and a much gentler chew than lean jerky gives you.
Is it worth the step up from Wild West Original? If you eat jerky for the meat rather than the marinade, yes. If you are mainly there for the sweet-savoury cure, Original does that job for less.
