Spicy Jerky Fried Rice

Fried rice is a comfort classic, but this version packs a punch with the rich, smoky bite of beef jerky. Perfect for a quick midweek dinner or a post-adventure refuel, it blends protein, veg, and a little chilli heat into one delicious wok-tossed dish.

Ingredients:
- 60 g beef jerky, chopped into small pieces
- 250 g cooked jasmine rice (cold)
- 2 large eggs (about 110 g)
- 80 g carrots, diced
- 60 g peas (fresh or frozen)
- 40 g spring onions, chopped
- 25 ml soy sauce
- 10 ml sesame oil
- 5 g fresh chilli, finely chopped (optional)
- 15 ml vegetable oil
Instructions:
- Heat vegetable oil in a wok over medium-high heat.
- Add carrots and peas, stir-fry for 2–3 minutes.
- Push vegetables aside, crack in eggs, and scramble until just set.
- Add jerky, rice, soy sauce, sesame oil, and chilli. Stir-fry 2–3 minutes.
- Toss in spring onions, stir, and serve immediately.
