What it eats like
Biltong is not jerky. There is no smoke and no sugary glaze here — the vinegar cure and the slow air-dry do all the work, so the beef tastes like beef, with coriander sitting warm behind it and black pepper on the finish. The slices stay tender rather than tough, which is why biltong tends to convert people who gave up halfway through a bag of jerky.
