Cruga Biltong Chilli — the family recipe with the heat turned up
Cruga Biltong Chilli is beef biltong built on an authentic South African family recipe and finished with a chilli spice blend that warms the meat instead of burying it. Like the rest of the range it is cured and air-dried whole rather than heat-dried like jerky, which is why it tears tender instead of snapping dry. Cruga has been making biltong in the UK since David Low, born in South Africa, brought the family recipe with him in the late 1950s.

How Cruga makes it
The base is the same as the Original. Whole beef goes into a vinegar marinade, gets salted, and is then hung to air-dry with no heat involved at all. The difference is the rub: chilli, paprika and cumin go over the standard cure, which is where the red edge and slow build come from. Made in the UK to the original South African method, with no added nitrates.
Taste and texture
The first bite is beef and vinegar tang. The chilli turns up a second later as a steady, dry warmth rather than a sharp sting, and it accumulates — the bag gets hotter the further in you go. Texture is that same soft, grainy tear as the Original, tender enough to eat without a jaw workout. If chilli is not your thing, Cruga Biltong Original is the same meat without the rub.
