Biltong Premium Biltong Original — air-dried South African beef, and not much else

Biltong Premium Biltong Original is sliced beef biltong made to a traditional South African recipe. It is cured with apple vinegar and dried slowly in air rather than smoked or baked, with coriander and black pepper doing the seasoning. High in protein, savoury rather than sweet, and it tastes of beef before anything else. The 25 g bag is a single sitting; the case is for people who already know how that goes.

Why this one

  • Air-dried, never smoked: no smokehouse, no barbecue glaze. The flavour comes out of the cure and the waiting.
  • Tender, not tough: slow drying leaves the slices soft enough to eat rather than gnaw.
  • High in protein: dried beef with the water gone, which is the point of the format.
  • The mild end of the range: start here, then move up to the Piri Piri when you want heat.

How Biltong Premium makes it

Biltong Premium works to South African methods rather than European ones. The beef is cured with apple vinegar and a coriander-led spice mix, then hung in moving air until it has dried down. The vinegar is the part European palates do not see coming: it seasons the meat and does the job smoke does elsewhere.

Taste and texture: warm coriander over clean beef, black pepper arriving late, and a faint sourness underneath from the cure. The slices stay soft and yielding, closer to a good cold cut than a dried stick — which is why biltong wins over people who once gave up halfway through a bag of jerky.

When to reach for it

This is the bag that lives in a desk drawer and gets opened at four in the afternoon when the biscuits have run out. It travels without complaint in a glovebox or a gym bag, and a handful on a board with cheese and olives makes snacking look deliberate.

Frequently asked

  • How is biltong different from beef jerky? Jerky is usually marinated, sweetened and dried with heat or smoke. Biltong is cured and then air-dried, so it comes out savoury and softer to chew.
  • Does it need refrigerating? Not while the bag is sealed — it keeps at room temperature. Once opened, close it up, keep it cool and dry and finish it within a few days.
  • Which size should I start with? The 25 g bag if this is your first biltong, the case if you have been here before and know one is not enough.
