QINA Eland Snapstick Biltong Chilli - big meat, real heat
QINA Eland Snapstick Biltong Chilli is free-range eland dried into a stick with chilli worked through the cure. Eland is the largest of the antelopes and the meat is correspondingly rich, rounder and more substantial than springbok and less sharply wild than blesbok, which is exactly the sort of meat that can take chilli without being flattened by it.
Why eland with chilli
The heat sits on top of the meat: warming rather than burning, and gone again before the next bite, so it seasons the eland instead of erasing it.
Chilli in the cure, not dusted on: it goes in before drying, so the heat runs through the stick rather than ending up on your fingers.
Rich without being heavy: eland is a lean game meat, and the richness comes from flavour rather than from fat.
How it is made
Cured first, dried second. The meat sits in its vinegar-and-spice cure, then air-dries slowly at low temperature in the biltong tradition. No cooking, no smoke. Drying it as a whole stick is what gives it that dense bite.
Taste and texture
Deep and beef-adjacent at first, since eland is the least challenging of the game meats here, and then the chilli arrives as a slow build rather than a slap, a savoury heat that settles at the back of the throat. The stick is firm and takes a while to get through, which suits the chilli: it has time to develop instead of landing all at once.
When to reach for it
Cold mornings, long drives, the hour in a ferry queue, and any moment when a plain snack would be a waste of an opportunity. It is also the one to bring along when somebody claims that nothing is ever spicy enough.
