Chokay is a Dutch chocolate maker based in Breda, in the Netherlands. Every ingredient in this 30 g bar is from organic origin, and the chocolate is built on inulin fibre rather than a sugar base — which is how Chokay gets a mild, rounded sweetness without adding anything sweet to the recipe.

The bar is 75% dark chocolate and 25% hazelnuts, so the nuts are structural rather than decorative. Expect deep cocoa first, then roasted hazelnut through the middle, and a long dry finish that never turns cloying.
