How Fine Gusto makes it:
Fine Gusto builds this one on dried beef and very little else – salt, pepper, a touch of rapeseed oil and a natural aroma. It takes 172 g of raw beef to make 100 g of the finished jerky, which is why the strips taste concentrated rather than watery. The slow, gentle drying is what keeps them pliable instead of brittle.
Taste and texture:
Coarse black pepper up front, then a long savoury beef finish with no sweetness behind it. The strips are firm with a real chew, but they tear cleanly rather than fighting back. If you find teriyaki and honey jerky too sweet, this is the one to reach for.
