Indiana Soft Beef Jerky Original: the tender one, without the sweetness

Indiana Soft Beef Jerky Original is beef jerky with the chew dialled down. The Soft line is dried to stay tender rather than firm, so you bite through a strip instead of negotiating with it. Original is the plain savoury baseline of the three, with nothing sweet between you and the beef.

Why this one

  • Soft, not soggy: tender enough to eat without a jaw workout, still dry enough to taste like properly dried beef.
  • Savoury the whole way: peppery and lightly smoked, with none of the sticky sweetness that dominates so much of the jerky on European shelves.
  • A small bag that means it: the strips are dense with beef, so 20 g reads as a snack rather than a taster.
  • Two ways to buy: a single 20 g bag to try it, or a fifteen-pack once trying it has gone well.

How Indiana makes it

Indiana cures the beef, seasons it simply and dries it, stopping short of the point where jerky goes stiff. That is the whole difference between the Soft line and a classic strip: less time in the dryer, more give in the bite. Bags are sealed under a protective atmosphere, so they keep in a cupboard until you open one. After that, a couple of days.

Taste and texture

Straightforwardly beefy. Salt, a light smoke, a peppery lift at the end and a clean savoury finish that does not hang around sweetly the way a marinated jerky does. The strips are pliable and slightly moist, tearing rather than snapping, which makes them easier going than Indiana's classic jerky. Of the three Soft flavours this is the quiet one.

Who it is for

First-time jerky buyers, because there is nothing here to get used to. Anyone who likes the idea of jerky but not the jaw ache. Lunchboxes and work bags, where it lies flat next to a laptop and needs nothing keeping it cold. And anyone buying for a household with strong opinions about spice, since nobody has ever objected to this one.

Frequently asked

How is the Soft line different from Indiana's classic jerky? Same beef, less drying. The classic strips are firm and chewy, the Soft ones stay tender. The flavours are in the same family, the textures are not.

Which Soft flavour should I start with? This one. Original is the reference point. Peppered lays coarse black pepper over the top and Hot & Sweet adds sweetness and warmth.

What is the faint white film on some strips? Normal. Indiana notes it on the pack: it turns up now and then on dried beef and does not affect quality.
