QINA Blesbok Snapstick Biltong - the loud one

QINA Blesbok Snapstick Biltong is free-range blesbok, cured, air-dried and pressed into a stick. Blesbok is the most outspoken meat QINA works with: darker, deeper and more obviously wild than springbok, with a long savoury finish that carries on after you have stopped chewing. If beef biltong is the comfortable default, this is the one that actually tastes like the bush.

Why blesbok

Proper game flavour: no hedging and no apology, which is what people mean when they say they want to taste the animal.

Lean meat, dense stick: blesbok is a lean antelope, and drying it as a single piece concentrates it into a chew that takes its time.

Free-range: the blesbok behind this stick are free-range animals, which is simply how the meat is produced rather than a line on the pack.

How it is made

Vinegar and spice go into the meat before any drying happens, and then it dries at low temperature rather than being cooked. No smoke, no shortcuts and nothing sweet brushed over the top. Because the stick dries as one piece, the bite comes out denser than a sliced strip.

Taste and texture

Dark, mineral and unmistakably game, with the spice of the cure sitting underneath the meat rather than covering anything up. It is the strongest flavour in the QINA range, and the finish is the long part: eat one and you will still know about it a minute later. The stick is firm and dry with a serious, unhurried chew.
