What springbok tastes like. Gentler than most people expect from game. There is a clear, clean savouriness to it and a fine grain that stays tender once dried — no livery edge, no heavy gamey punch. Next to the QINA beef it reads more delicate; next to blesbok or eland it is the easy introduction to game biltong.
Cured, then air-dried. QINA cures the meat in vinegar and spice before it ever goes near a drying room, then dries it slowly at low temperature. That is the biltong method, and it is why the flavour comes from the meat and the cure rather than from smoke or a sticky marinade.
Free-range, by definition. Springbok are not farmed in sheds; they graze open veld, which is a large part of why the meat is as lean and as clean-tasting as it is. Sliced thin, it works on a board with something sharp to drink, in a rucksack on a long walk, or straight out of the bag on the sofa.
Best for: adventurous snackers and biltong lovers who want something different.
