Kuivalihakundi Chicken Jerky Sriracha is Finnish chicken breast dried into the tangy, garlicky, chilli-forward flavour everyone recognises from the bottle. Then it quietly goes further: there is Naga Jolokia in the cure alongside the red chilli, which is why this one outruns most snacks with "sriracha" on the front.

How Kuivalihakundi makes it

Whole chicken breast is cured and dried slowly at low temperature in Finland. Sriracha is really a balance of chilli, garlic, a sour note and a touch of sweetness, and drying concentrates all four at once — the flavour ends up more intense in a strip of jerky than it ever is in a sauce, because the water has gone and the taste has not.

Taste and texture

Garlic and tang land first, with a sweet-sour backbone from a honeyed vinegar that keeps it from tasting flat. The chilli builds behind that, slowly, and then keeps building for longer than you expected — the Naga is patient. Chicken carries it all differently from beef: lighter in the hand, cleaner on the palate, with a firm chew that tears rather than resists. The heat lands solidly in the middle of the range, well past a typical sriracha snack and well short of Hot Naga.
