About this item

Wild West Steak Strips Honey BBQ – barbecue flavour with enough meat under it to matter

Wild West Steak Strips Honey BBQ takes the brand's barbecue cure and puts it on the thick cut. Real honey, tomato and apricot go into the marinade, the beef is cut closer to steak than to jerky slices, and what comes out is sticky at the edges and substantial in the middle. It is British-made and it eats like a slow-cooked rib that learned to fit in a bag.

Why this one

  • More meat to carry the sweetness: the same barbecue marinade as the standard bag, but on a thicker strip, so the sugar has something to balance against.
  • Sticky edges, dense centre: the fruit in the cure keeps the outside tacky while the thick cut stays properly meaty.
  • One piece is a piece: on a sharing board these look like food rather than confetti.
  • 25 g and 60 g bags, with sixteen-pack cases behind them.

How Wild West makes it

Wild West is a British brand and the Steak Strips are produced in the UK. The thick cut means the barbecue marinade has to work harder to get all the way through, which is why the flavour reads as cooked into the meat rather than painted onto it. The strips are marinated and cooked, not merely dehydrated.

Taste and texture

Honey and tomato land first with a jammy, slightly smoky depth behind them, then the beef arrives properly rather than as an afterthought. Because there is more meat per piece, the sweetness reads as seasoning instead of as the whole event. The chew is firm and long, with tacky edges and a denser interior than the thin-sliced Honey BBQ bag.

When to reach for it

Grazing boards, where it holds its own next to cured meat and cheese. Long train journeys, because it lasts. The stretch of a barbecue where the food is late and everybody is circling the table. It also travels well to a desk, provided you accept that colleagues will notice the smell.

Frequently asked

This or the standard Wild West Honey BBQ? Same flavour, different experience. Take the standard bag for soft, quick, snackable strips; take these when you want the barbecue flavour on something you have to chew.

Can I keep an opened bag for a week? Not really. Wild West says to finish these within three days of opening, and the thicker cut is the reason.

Do the strips stick together? A little, because of the honey and fruit in the cure. They pull apart cleanly enough.
