Kuivalihakundi Beef Jerky Teriyaki is the sweet-savoury corner of the Finnish brand's beef range. Kuivalihakundi keeps its usual slow-dried beef base and pushes it toward the teriyaki register with ginger, a little onion and a sweet cure, held in check by vinegar and black pepper. It speaks the universal teriyaki language without claiming any heritage it does not have.

How Kuivalihakundi makes it

Same Finnish method as the rest of the range: roast beef, a salt cure, a marinade, and a slow dry at low temperature rather than a fast blast of heat. The teriyaki character comes from what goes into the marinade, not from a glaze brushed on at the end, which is why the sweetness runs through the strip instead of coating it.

Taste and texture

Sweetness arrives first and is immediately joined by warm ginger, which keeps it lively instead of syrupy. Onion fills out the middle, vinegar pulls it back from the edge, and black pepper stops the whole thing reading as a dessert. The chew is the same dense, unhurried Kuivalihakundi texture, just with a glossier flavour riding on top.

Who it is for

The gateway bag. Hand it to someone who thinks they do not like jerky and watch them change their mind. It also works torn up over a bowl of rice or noodles, which is not what it was designed for but is a very good idea. Cold lager, or dry sake if you happen to have a bottle open.

Is it as sweet as American teriyaki jerky? No, and deliberately so. The sweetness is balanced against the cure rather than layered over the top, so the beef is still clearly the main event.

Is the beef Finnish, like the rest of the range? This one is made in Finland using EU-origin beef. The Original, Mild Habanero and Hot Naga bags use Finnish-origin beef.
