Chicken dries into something quite unlike beef jerky — pale, fine-textured, closer to a really good dried chicken breast than to a slab of cured beef. The seasoning is restrained so the meat carries the flavour, with garlic and pepper doing the work and a light smoke underneath. Of everything Indiana makes, this is the cleanest-tasting bag in the range.

How Indiana makes it

Chicken is cured, lightly smoked and slow-dried in the traditional Indiana way. A good deal more raw meat goes in than comes out, which is what gives a small bag its weight. Packed in a protective atmosphere, shelf-stable, no fridge needed — once it is open, finish it within a couple of days. The occasional white film on dried meat does not affect quality.
