How Indiana makes it

Whole beef is cured, lightly smoked and slow-dried, with a good deal more raw meat going in than comes out the other end — that is where the density comes from. Bags are sealed in a protective atmosphere, so no refrigeration is needed until you open one; after that, finish it inside a couple of days. A faint white film on the surface sometimes appears and does not affect quality.

The 25 g bag is glovebox and gym-bag sized. The 60 g is the everyday one. The 300 g bag is for households that have learned the hard way that 60 g does not go far between two people, and the gift packs are the easiest present you will buy all year.
