Indiana Jerky Chicken Original: the cleanest-tasting bag Indiana makes

Indiana Jerky Chicken Original is chicken breast cured, lightly smoked and slow-dried into thin, pale strips. It is lean, high in protein, and the most restrained thing in the Indiana range: the seasoning stays out of the way and lets the meat be the flavour, which is rarer in dried meat than it ought to be.

Why this one

  • Lean and high in protein: a chicken breast dried down hard, with very little else going on.
  • It does not linger: the flavour finishes cleanly, so it will not sit on top of your coffee or your lunch.
  • Fine-textured strips: chicken dries thinner than red meat, which makes the pieces easy to tear and quick to eat.
  • Nothing sweet in the cure: no glaze, no syrup, no sticky fingers.

How Indiana makes it

Chicken is cured with salt, pepper and garlic, given the same light smoke as the rest of the line and dried slowly rather than fast. Because poultry dries down so far, a small bag is denser than it looks in your hand. Packs are flushed and sealed under a protective atmosphere, so they sit on a shelf without a fridge until the day you open one, and then Indiana would like the bag finished within a couple of days.

Taste and texture

Mild, savoury and distinctly poultry rather than distinctly cured. Garlic and pepper are the only things you can really name, and even they keep their voices down. The strips are finer and drier than the turkey, closer in feel to good dried chicken breast than to a slab of jerky, and they break apart rather than stretch. If the Peppered beef is a shout and the Pork is a low hum, this one barely speaks.

Who it is for

Anybody who wants a snack that does not follow them around for the rest of the afternoon. Useful before training, when heavy food is a bad idea. Useful at a desk, when you would rather the whole office did not know what you are eating. Useful on a long walk, where a sandwich turns to paste by hour two.

Frequently asked

Is it the same as the turkey? No. Turkey is softer and rounder in flavour; chicken is finer, drier and cleaner. They are the two mildest bags in the range, but they are not interchangeable.

Does it need refrigerating? No, not while the bag is sealed. Cool, dry and away from sunlight is all it wants.

There is a pale bloom on one of the strips. That is normal on dried meat and does not affect quality.

Chicken, salt, sea salt (0,2%), SOY PROTEIN HYDROLYSATE (SOYA), yeast extract, wine vinegar, pepper, aroma, smoke aroma, garlic, preservative: sodium nitrite. It takes 225g of chicken to make 100g of final product. Packed in protective atmosphere. Storage: no cooling. Consume within 48 hours from opening. Occasional white film on product does not impair quality. Oxygen absorber in packaging is not edible.
