Indiana Jerky Beef Hot & Sweet: sweet-savoury beef with a slow peppery burn

Indiana Jerky Beef Hot & Sweet is the same EU-sourced beef jerky Indiana dries for the rest of the range, pointed in a sweeter, warmer direction: a savoury cure with a sweet edge, smoke underneath and pepper building behind it. It starts friendly and then makes its point.

Why this one

  • The heat arrives late: nothing hits you on the first bite. The warmth builds across the back of the tongue while you are already reaching for the next piece.
  • Sweet, but not a sweet snack: the sweetness balances the seasoning rather than glazing the strip. You taste beef first and last.
  • High in protein: dried down hard, so even a small bag stands in for something more substantial.
  • Two sizes, two behaviours: the 25 g bag is a single sitting, the 90 g bag is what you take to somebody's house.

How Indiana makes it

The beef is cured, seasoned and lightly smoked, then dried slowly so the strips stay pliable instead of turning brittle. The flavour goes into the cure rather than onto the surface, which is why nothing rubs off on your fingers. The bags go out under a protective atmosphere, so a cupboard shelf is all the storage they need. Two days is Indiana's guidance once one has been opened. A little white film on the surface now and then is normal and says nothing about quality.

Taste and texture

Smoke and salt land first, then a rounded sweetness, then the pepper turns up and settles in for a while. The heat is warming rather than punishing, so nothing ever stops you having one more piece, which is the entire problem with this bag. The strips are soft-edged and tear along the grain. Against the Original it is livelier, against the Peppered it is rounder and less dry.

Who it is for

Barbecues, as the thing everyone eats while waiting for the actual food. Camping, where sweet and salty both start to matter more than they do at home. Parties, since one open bag does the work of a whole bowl of crisps. And anyone who finds plain jerky a little too well behaved.

Where does it land on heat? Warm, not fierce. It climbs over a few pieces and then holds there. Nobody has ever needed a glass of water.

This or the Soft Hot & Sweet? This is the firmer, drier classic strip and the sweetness in it is restrained. The Soft version is tenderer and noticeably sweeter. Same idea, two different textures.

Cupboard or fridge? Cupboard. Sealed bags keep at room temperature, and an opened one wants finishing within a couple of days.

Beef, salt, sea salt (0,2%), sugar, SOY PROTEIN HYDROLYSATE (SOYA), yeast extract, wine vinegar, dextrose, pepper, aroma, smoke aroma, garlic, preservative: sodium nitrite. It takes 225g of Beef to make 100g of final product. Packed in protective atmosphere. Storage: no cooling. Consume within 48 hours from opening. Occasional white film on product does not impair quality. Oxygen absorber in packaging is not edible.
