Indiana Jerky Beef Original: the bag the rest of the range answers to
Indiana Jerky Beef Original is the classic beef jerky of the Indiana line, made from EU-sourced beef that is cured, lightly smoked and slow-dried to the original recipe. Soft enough to eat without a fight, savoury enough that one strip quietly becomes four, and the reference point every other Indiana flavour gets measured against.
Why this one
- Start here: Peppered sharpens this recipe, Hot & Sweet sweetens it, Less Salt dials it back. Original is the middle of the map.
- Soft-dried, not brittle: the strips bend instead of snapping, so there is none of the jaw ache cheap jerky inflicts.
- High in protein, and nothing sweet added to the cure: the flavour comes from beef and smoke, not from syrup.
- Sized for real life: a small bag for the coat pocket, a medium one for the week, a large one for a household that shares.
How Indiana makes it
Whole muscle beef is cured with salt and pepper, given a light smoke and then dried slowly rather than blasted, which is what keeps the slices pliable. Bags are sealed under a protective atmosphere, so nothing needs a fridge until you break the seal. After that Indiana asks you to finish the bag inside a couple of days, which has never been the hard part.
Taste and texture
Clean and beef-forward, with the smoke sitting a step behind the meat rather than in front of it. Pepper and garlic are there, but restrained. The chew starts firm, gives on the second bite and finishes dry and savoury, which is exactly why it is so easy to keep going. Nothing in it shouts, which is rather the point.
Who it is for
The glovebox on a long motorway run. The drawer you raid at four in the afternoon. The bag you hand to someone who says they have never really got jerky, because if this one does not land, none of them will.
Frequently asked
Which size should I buy? The 25 g bag is a single sitting. The 60 g is the everyday choice. The 90 g is for people who have learned that a small bag between two is a negotiation, not a snack.
Does it need refrigerating? No. It is shelf-stable until the bag is opened, which is why it survives rucksacks, desks and car doors so well.
There is a faint white film on a strip. Is that a problem? No. A pale surface film turns up on dried meat now and again and does not affect quality.
