Indiana Jerky Beef Peppered: cracked black pepper on every strip
Indiana Jerky Beef Peppered is the Indiana beef jerky with a generous coat of coarse-ground black pepper worked into it. Pepper is a blunt instrument in the wrong hands. Used properly, as it is here, it is aromatic rather than dusty and warm rather than hot, and it sharpens the beef instead of burying it.

How Indiana makes it
Beef is cured, coated with the pepper blend, taken through a light smoke and dried slowly so the strips stay flexible rather than snapping. The pepper is applied before drying, so it sets into the surface of the meat instead of falling off into the bottom of the bag. Packs are sealed under a protective atmosphere and need no cooling while they are shut. Once open, Indiana asks for it to be eaten within a couple of days.
Taste and texture
The first thing you get is the pepper: piney, faintly citrussy, more perfume than heat. Underneath it the beef is savoury and slightly drier than the Original, and the finish is long and warming rather than sharp. The chew is proper jerky chew, firm at first and then giving. Against the Original it tastes brighter and more defined; against Hot & Sweet it is drier and far less likely to end up on your fingers.
Who it is for
Cold-weather people. Anyone watching a match with something dark in a glass. Long evenings, campsites, and the specific kind of snacker who reads the spice list first. Also the right call when chilli is not welcome but plain is not enough.

Is it actually spicy? Not in the chilli sense. Black pepper gives warmth and aroma, so you get a pleasant tingle rather than a burn.
Peppered or Hot & Sweet? Peppered if you want dry, savoury and sharp. Hot & Sweet if you want honeyed sweetness with chilli behind it. They are aimed at different evenings.
Does the pepper come off in the bag? Barely. It goes on before drying, so most of it stays where it was put.
