Indiana Jerky Turkey Original: the gentlest bag in the range

Indiana Jerky Turkey Original is turkey breast cured, lightly smoked and slow-dried into pale, fine-grained strips. It is the leanest thing Indiana makes and by some distance the easiest to eat, which is why it keeps converting people who had decided, on the basis of one bad petrol-station bag, that they do not like jerky.

Why this one

  • The leanest meat in the Indiana line: turkey simply carries less fat than the beef or the pork does.
  • Soft strips: turkey dries finer than beef, so the pieces stay tender instead of turning into something you have to negotiate.
  • High in protein, and unglazed: the flavour comes off the bird and the smoke, with nothing sticky on top.
  • The safe gift: if you are buying dried meat for somebody whose tastes you do not know, this is the bag that never offends anyone.

How Indiana makes it

Turkey is cured with salt, pepper and garlic, given a light smoke and dried slowly so the slices keep some give. Bags are sealed under a protective atmosphere, which is why they live perfectly happily in a cupboard. Once the seal is broken Indiana asks for the bag to be finished inside a couple of days, and there is an oxygen sachet tucked in the pack that is not food.

Taste and texture

Much quieter than the beef. Think roast turkey rather than cured meat: a gentle, almost Sunday-lunch savouriness, with garlic sitting underneath and the smoke barely raising its voice. The strips are paler and finer, and they give on the first bite rather than the third. Where the beef leaves a mineral, iron-ish trace at the back of the mouth, this finishes clean and stops.

Who it is for

Long-haul flights and airport lounges. Lunchboxes, including the small ones. The bag you take when you want something to eat quietly in a meeting. Anyone who finds red meat heavy going in the afternoon but still wants something that is not a biscuit.

Frequently asked

Is it softer than the beef jerky? Yes, noticeably. Turkey has a finer grain, so the strips tear more easily and chew faster.

Does it taste of smoke? Only a little. The smoke is there to round the flavour, not to lead it. If you want more character, the Peppered beef is the other direction entirely.

How should I store it? Cupboard, cool and dry, no fridge needed while the bag is sealed. Clip it shut once it is open and get on with it.

It takes 225g of Turkey to make 100g of final product. Packed in protective atmosphere. Storage: no cooling. Consume within 48 hours from opening. Occasional white film on product does not impair quality. Oxygen absorber in packaging is not edible.
