Indiana Jerky Pork Original: the full-flavoured one
Indiana Jerky Pork Original is EU-sourced pork cured, lightly smoked and slow-dried into strips that come out rounder and fuller than the beef. Of the four meats Indiana dries this way, pork is the one with the most weight behind it, and the bag that tends to get opened when there is more than one person in the room.
Why this one
- More body than the beef: pork carries a little more fat, and that fat is where the roundness in the flavour comes from.
- A softer chew: the strips stay pliable, closer to a good cured sausage than to a dried slab.
- Protein-dense and unsweetened: the sweetness you taste is the pork itself, not syrup.
- A change of gear: if you have worked through the beef line and want something different rather than something stronger, this is it.
How Indiana makes it
Pork is cured with salt, pepper and garlic, taken through a light smoke and dried down slowly, so the slices end up bendy rather than brittle. The finished strips are packed under a protective atmosphere, which keeps them shelf-stable with no cooling at all. After opening, the clock runs short: Indiana says a couple of days. A faint pale film sometimes forms on dried meat and says nothing about quality.
Taste and texture
Sweeter and mellower than beef jerky, without any sugar being involved. The smoke sits further forward here and the finish is longer and fattier, with a savoury tail that lingers. The bite is soft and slightly yielding, so the strips pull apart in the mouth rather than needing work. Against the Turkey it is the opposite pole of the range, and against the Beef Original it is the same idea played a fifth lower.
Who it is for
Card tables. Match days. The bag you put in the middle when three people are watching something and nobody wants to cook. It is also a good one for anyone who thinks beef jerky tastes a bit stern and wants the same thing with the edges knocked off.

How is it different from the beef? Rounder, softer, a touch sweeter naturally, and the smoke is more obvious. The beef is drier and more mineral.

Does it need refrigerating? No. Sealed, it is happy at room temperature, which is why it works in a rucksack or a car.

It takes 225g of Pork to make 100g of final product. Packed in protective atmosphere. Storage: no cooling. Consume within 48 hours from opening. Occasional white film on product does not impair quality. Oxygen absorber in packaging is not edible.
