Indiana Vegan Hot & Sweet: plant-based jerky that bites back
Indiana Vegan Hot & Sweet is a meat-free jerky alternative built on a pea and sunflower protein base, dried into strips and finished with smoky chilli heat and a sweet edge. It is the loud half of Indiana's vegan pair, and the one to hand anybody who assumes plant-based snacking means politely flavoured cardboard.

How Indiana makes it
Indiana blends the plant protein base with seasoning, forms it into strips and dries them slowly so the texture stays fibrous rather than crumbly. The chilli and the sweet, faintly caramelised backbone go on before drying, so the flavour sits inside the strip rather than dusting your fingers. Bags are filled under a protective atmosphere, and Indiana asks that you keep this one out of the fridge and finish an open bag within a couple of days.
Taste and texture
Dark and sticky-sweet up front, with a tomato-and-caramel depth underneath that reads almost barbecue. Then the chilli turns up, slow and rounded rather than sharp, and settles into a warm glow that lasts into the next piece. The texture is fibrous and slightly springy, closer to a pulled strip than a pressed bar. Alongside the Vegan Original it is darker, sweeter and considerably less well behaved.
