Kuivalihakundi starts from Finnish beef roast, keeps the cure short, and dries it gently. What you get back is meat, seasoning, and no sauce-bottle aftertaste. Kuivaliha literally means "dried meat" in Finnish, which is the tradition Nordic farmers and hunters used for centuries to get protein through long winters. Kuivalihakundi applies that to Finnish farm-raised beef sliced from prime roast cuts. The meat is salt-cured, marinated, then dried slowly in low-temperature chambers rather than pushed through fast heat. Garlic and black pepper season it and then get out of the way.

Taste and texture

Savoury and direct: roast beef up front, a light garlic-and-pepper seasoning behind it, and a dry, clean finish with no sugary tail. The texture is dense and properly chewy — built for slow eating rather than for emptying a bag in front of the television.
